Cheddar Cheese, Potato, & Bacon

 
Ingredients (Yields: 2 quarts)

7.5 oz.             Bistro Soup Mix  

1 qt.                 Water

1 cup               Heavy Cream

¼ cup              Onion, small dice 

¼ cup              Celery, chopped

½ tsp               Garlic, chopped

2 cups              Cheddar Cheese (shredded)

3 cups              Potatoes, diced and drained 

1 cup               Bacon, cooked and chopped

Preparation

1. Bring water, heavy cream, onions, celery and garlic to a boil. 

2. Simmer for 5 minutes

3. Using a whisk, mix in 1 packet of Bistro Blend Soup Mix (whisk until smooth)

4. Add cheese, potatoes, and bacon 

5. Simmer for 5 minutes over medium heat – stirring frequently

Optional Garnish: Sour Cream, Scallions, Bacon and Cheddar Cheese

 

Lobster Bisque

 
Ingredients (Yields 6oz servings)

7.5 oz.             Bistro Soup Mix

3 cups              Water

1 cup               Clam Juice

1 cup               Heavy Cream

1/4 cup           Onion, small dice 

1/4 cup           Sherry

1/2 tbsp.         Tarragon (Fresh Preferably)

3.5                  Lobster Meat (or Sensations)  

Preparation

  1. Bring water, heavy cream, Sherry, clam juice, and onions to a boil. 

  2. Simmer for 5 minutes

  3. Using a whisk, mix in 1 packet of Bistro Blend Soup Mix (whisk until smooth) 

  4. Add Lobster Meat and tarragon.

  5. Simmer for 5 minutes over medium heat – stirring frequently

Optional Garnish: Chopped Parsley or Chives

Mushroom Bisque

 
Ingredients (Yields: 1 1/2 Gallons)

7.5 oz.             Bistro Soup Mix  

1 qt.                 Water

1/2 q               Heavy Cream

1 each              Onion, small dice 

1 tsp                 Garlic, chopped

6 cups               Sliced Fresh Mushrooms (4 Cups Canned)

1 tsp                 Black Pepper

Preparation

1. Bring water, heavy cream, onions, mushrooms, black pepper and garlic to a boil. 

2. Using a whisk, mix in 1 packet of Bistro Blend Soup Mix (whisk until smooth)

3. Simmer for 10 minutes over medium heat – stirring frequently

Optional Garnish: Sour Cream, Scallions, or Bacon

 
 

Roasted Red Pepper Bisque

 
Ingredients (Yields 6 – 8oz servings)

7.5 oz.             Bistro Soup Mix  

1 qt.                 Water

1 cup                Heavy Cream 

1/4 cup            Onion, small dice 

1/4 tsp             Garlic, chopped         

14 oz               Roasted Red Peppers (drained and pureed)

Preparation

  1. Bring water, heavy cream, onions, garlic, and roasted red peppers to a boil.

  2. Simmer for 5 minutes

  3. Using a whisk, mix in 1 packet of Bistro Blend Soup Mix (whisk until smooth)

  4. Simmer for 5 minutes over medium heat – stirring frequently

Optional Garnish: Chopped Parsley or Chives

 

Pumpkin Soup

 
Ingredients (Yields: 7 quarts)

7.5 oz.             Bistro soup mix

4 cups              Water

1 cup               Heavy Cream

1 8oz can         Pumpkin

1 tsp                Cinnamon

1/4 tsp            Nutmeg

1/2 cup           Brown Sugar

Preparation

  1. Bring water, heavy cream, cinnamon, nutmeg and brown sugar to a boil. 

  2. Simmer for 10 minutes

  3. Using a whisk, mix in 1 packet of Bistro Blend Soup Mix (whisk until smooth) 

  4. Add pumpkin. 

  5. Simmer for 10 minutes over medium heat – stirring frequently

Optional Garnish: Sour Cream, Scallions, Chives, or Pumpkin Seeds

Tomato Bisque

 
Ingredients

7.5 oz.             Bistro Soup Mix  

4 cups              Water

1 cup                Heavy Cream

1/4 cup            Onion, small dice 

6 oz                  Tomato Paste

1 tbsp                Basil (Fresh)

Preparation

  1. Bring water, heavy cream, onion, basil, and tomato paste to a boil.

  2. Simmer for 5 minutes.

  3. Using whisk, mix in 1 packet of Bistro Soup Mix (whisk until smooth)

  4. Simmer for 5 minutes over medium heat – stirring frequently

 
 

Butternut Squash Bisque

 
Ingredients 

7.5 oz.             Bistro soup mix

1 quart              Water

1 cup               Heavy Cream

3 cups              Cut Butternut Squash (steamed and blended)      

Preparation

  1. Bring water, heavy cream, and butternut squash
    (puree steamed and blended) to a boil.

  2. Simmer for 5 minutes.

  3. Using whisk, mix in 1 packet of Bistro Soup Mix (whisk until smooth)

  4. Simmer for 5 minutes over medium heat – stirring frequently

 

Asparagus Bisque

 
Ingredients 

7.5 oz.             Bistro soup mix

4 cups              Water

1 cup               Heavy Cream

3 cups              Fresh Asparagus – (chopped, blanched & blended)    

Preparation

  1. Bring water, heavy cream, and fresh asparagus
    (chopped puree, blanched & blended) to a boil.

  2. Simmer for 5 minutes.

  3. Using whisk, mix in 1 packet of Bistro Soup Mix (whisk until smooth)

  4. Simmer for 5 minutes over medium heat – stirring frequently
